The Science of Gelato

The 7/8th grade science class went to Shelburne's La Villa Bistro last week for our weekly outreach program. The class learned about the science behind why gelato is different than ice cream, and made their own gelato using La Villa's new Italian gelato machine, one of the few in the area. The students got hands on experience with topics related to their current unit on states of matter and phase changes: they learned how sugar and salt affect freezing point and why this made it a challenge to use natural ingredients such as fresh strawberries in gelato, as La Villa does, and why gelato is served at a different temperature and tastes creamier even though it has less fat than ice cream. The students also got to make their own pizza for lunch! Thanks to the Spell family at La Villa for this amazing experience, and for the delicious gelato we sampled, including salted caramel and cookies and cream!
